Honey Mustard Nuggets

1 pound tofu -- frozen, thawed, and squeezed dry

1/4 cup water

1/4 cup honey

1/4 cup spicy or Dijon mustard

2 tablespoons soy sauce or tamari

1 tablespoon lemon juice

1 tablespoon onion powder

1 teaspoon garlic powder

OR

1 clove garlic -- minced

 

Preheat the oven to 350F.

 

Cut the tofu into 1 " x 1 " x 1/2 " pieces, and place in a shallow bowl or baking

pan.

 

With a whip or in a food processor or blender, blend together the water, honey,

mustard, soy sauce, lemon juice, onion powder, and garlic. Pour this mixture

over the tofu pieces, and gently squeeze it in with the palm of your hand until

it is evenly distributed and absorbed.

 

Spread out the tofu pieces one layer thick on an oiled baking sheet, and bake

for about 10 minutes, or until they start to brown on the bottom. Flip the

pieces over and bake about 5 to 10 more minutes. Serve hot.
