Thai Tofu in Peanut Sauce

1 pound tofu -- frozen, thawed, and squeezed dry

4 cloves garlic

1 2 " square piece fresh ginger root

1/4 cup peanuts

1 cup cilantro leaves (2 oz) -- loosely packed

1/4 cup peanut butter

1/4 cup soy sauce

1/4 cup water

3 tablespoons rice vinegar

3 tablespoons honey

1/2 teaspoon red pepper flakes

2 green onions -- chopped

 

Preheat the oven to 350F.

 

Cut the tofu into 1/4 " thick slices.

 

In a food processor, chop the garlic, ginger, peanuts, and cilantro. Add the

peanut butter, soy sauce, water, vinegar, honey, and cracked red pepper flakes,

and blend until smooth.

 

Pour half the sauce in a 7 x 11-inch baking pan. Lay the tofu slices on top,

then pout the rest of the peanut sauce over the top. Press each slice so it

absorbs the sauce. Bake for about 15 to 20 minutes, or until the slices start

to brown. Sprinkle with green onions and serve hot with rice.
