Soba with Tofu and Peanuts

For the Marinade:

1 tablespoon balsamic vinegar

2 tablespoons soy sauce

2 teaspoons fresh hot chile of choice -- chopped

1 teaspoon toasted sesame oil

1 tablespoon fresh ginger root -- grated

1 clove garlic -- minced

1/2 pound firm tofu -- cut in 1 " x 3/4 " x 1/2 " pieces

1/2 pound soba noodles

1/2 cup fresh cilantro -- chopped

1/4 cup dry roasted peanuts

2 tablespoons green onions -- chopped

 

Mix the vinegar, soy sauce, chile, sesame oil, ginger, and garlic. Pour the

mixture over the tofu pieces to marinate.

 

Boil the soba noodles until tender. Rinse in hot water and drain.

 

While the noodles are cooking, brown the tofu pieces on a non-stick grill,

reserving the marinade. Toss the noodles and browned tofu together with the

cilantro, peanuts, green onions, and the remaining marinade. Serve hot or cold.
