Feta Cheese Spread with Mint and Garlic

Amount Measure Ingredient -- Preparation Method

1/4 cup finely chopped fresh mint

2 cloves garlic -- (to 3) peeled & chopped

3 tablespoons extra virgin olive oil -- (to 4)

1/2 teaspoon freshly ground black pepper -- (or less)

1/2 pound feta cheese -- rinsed & drained

1 tablespoon strained fresh lemon juice -- (to 2)

 

Puree the mint, garlic, olive oil, and pepper in a food processor until the

mixture is like a paste, similar to pesto in texture.

 

Crumble the feta and add it to the processor. Pulse until smooth and creamy.

Adjust seasoning with lemon juice and more olive olive if needed.
