Asian Greek Salad

1/4 cup olive oil

2 tablespoons wine vinegar

2 tablespoons miso

1/4 teaspoon freshly ground black pepper

2 cloves garlic

2 tablespoons fresh basil -- chopped

1 tablespoon fresh oregano -- chopped

1 pound firm tofu -- cut in 1/2 " cubes

1 head leaf lettuce

2 fresh tomatoes -- cubed

2 cucumbers -- cubed

1 avocado -- cubed

1/2 small red onion -- chopped

1/2 cup Greek or black olives

 

Blend the olive oil, vinegar, miso, black pepper, and garlic. Stir in the basil

and oregano.

 

Pour the dressing over the tofu cubes in a glass or stainless steel bowl, and

marinate at least 1 hour or overnight.

 

Wash and dry the lettuce, and arrange in a salad bowl. Toss all the rest of the

ingredients together, and serve in the lettuce lined bowl.
