Kathleen * Exported from MasterCook * Vegetable Fried Rice Recipe By : One Dish Vegetarian by Maria Robbins, page 100 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Rice Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups cooked and chilled white or brown rice 2 tablespoons peanut or canola oil 1 medium onion halved and thinly sliced 2 garlic cloves -- finely minced up to 3 1 teaspoon freshly grated ginger 6 scallions green parts included, trimmed and chopped green parts reserved for garnish 1 green or red bell pepper -- seeded and chopped 1/4 pound fresh mushrooms -- sliced (your choice) 1 1/2 cups shredded green cabbage 1 1/2 cups fresh bean sprouts -- rinsed and drained 1/2 teaspoon salt 3 tablespoons soy sauce 1/2 teaspoon sugar Freshly ground black pepper 1 cup fresh or frozen green peas -- (thawed) 2 teaspoons toasted sesame oil -- up to 3 Additional soy sauce ***GARNISH*** 1 bunch watercress -- stems removed leaves coarsely chopped 4 main-dish servings Don't hesitate to prepare this tasty dish even if you have to start from scratch and cook the rice earlier in the day. The results are worth it-a healthful and delicious one-dish meal. 1. Crumble the rice with your fingers to separate the grains. Set aside. 2. In a large saute pan or wok, heat the oil over medium heat. Add the onion and stir-fry for 2 to 3 minutes, until the onion is translucent. Add the garlic, ginger, and white parts of scallions and stir-fry for 30 seconds. 3. Add the pepper and mushrooms and stir-fry for 2 minutes. Add the cabbage, bean sprouts, salt, soy sauce, sugar, and several grindings of black pepper and stir-fry for 2 minutes more. Add the peas and rice, mix well, and stir-fry until everything is hot and all the liquid has been absorbed, 5 to 6 minutes. (If the mixture is too dry while cooking, stir in 2 to 3 tablespoons water.) 4. Remove from heat, stir in the sesame oil, and additional soy sauce, if desired. Garnish with chopped green scallion tops and chopped watercress, if using. Variations: Select any of the following ingredients to add to your fried rice or replace any other ingredient: cooked corn kernels, shredded carrots, scrambled eggs, cooked broccoli, steamed, chopped greens, toasted peanuts, cashews, pine nuts, pumpkin or sunflower seeds. - - - - - - - - - - - - - - - - - - Quote Link to comment Share on other sites More sharing options...
