Wagon Wheels with Zucchini. Beans, And Tomatoes

Amount Measure Ingredient -- Preparation Method

2 tablespoons olive oil

6 large garlic cloves -- finely minced

OR pushed through a garlic press

1 teaspoon red pepper flakes -- or more to taste

6 small zucchini -- (about 1 pound)

cut into 2-inch julienne cups

1 1/2 vegetable broth

1/2 cup finely chopped flat-leafed parsley

Finely chopped zest of 1 lemon

12 ounces canned cannellini beans -- drained and rinsed

1 teaspoon salt

Freshly ground black pepper -- to taste

3 tablespoons fresh lemon juice

2 ripe tomatoes -- coarsely chopped

(2 to 3)

2 tablespoons salt

1 pound wagon wheels

1 cup shredded basil leaves

1/2 cup freshly grated Parmesan cheese

 

4 to 5 main-course servings

 

This is a great pasta meal for midsummer. If you have a garden and a

well-stocked pantry, you may not even have to shop.

 

1. Place a large pot of water (6 quarts) on high heat to boil for the pasta.

 

2. In a large saute pan or skillet, heat the olive oil over medium

heat. Add the garlic and red pepper flakes, and saute for 1 minute. Add

the zucchini, tossing with a spatula over high heat for 1 minute. Add the

vegetable broth, parsley, and lemon zest. Reduce heat to medium and cook

for 5 minutes. Stir in the cannellini beans and cook for another

minute. Turn off the heat and season with salt and pepper to taste. Stir

in the lemon juice and chopped tomatoes.

 

3. Salt the boiling water and cook the wagon wheels for 8 to 10 minutes,

until they are al dente. Scoop out the pasta and add to saute pan with

vegetables. Let some

 

of the cooking water transfer along with the pasta. Add the shredded basil

and toss well to make sure the wagon wheels are all sauced.

 

4. Serve in pasta bowls and serve the cheese or bread crumbs.
