Three Bean Soup

1 medium onion -- chopped

3 cloves garlic -- minced

1 medium green pepper -- chopped

3 cups water

1 cup crushed tomatoes or tomato sauce

1 cup cooked soybeans

1 cup cooked black beans

1 cup cooked kidney beans

1 teaspoon oregano

1 bay leaf

1 1/2 teaspoons salt

1/8 teaspoon allspice

1/8 teaspoon chipotle

 

Saute the onion, garlic, and green pepper in the oil just until tender.

 

Stir in the rest of the ingredients, and heat to boiling. Simmer a few minutes

and serve.

 

Description:

" This is a hearty soup. Use leftover or canned beans for a quick

meal. "
