Green Soybean Soup

6 cups water

1 pound green soybeans -- shelled

1 small onion -- chopped

2 cloves garlic -- minced

1 cup carrots -- chopped

1 teaspoon salt

1/4 cup cilantro -- chopped

OR

1/4 teaspoon tarragon

 

Boil the green soybeans in the water for 20 minutes.

 

Add the onion, garlic, carrots, and salt, and simmer until the carrots are

tender. Stir in the cilantro, simmer a few more minutes, and serve hot.

 

Description:

" Make this soup with either green soybeans when available or pressure

cooked dried soybeans. "
