Guest guest Posted August 15, 2000 Report Share Posted August 15, 2000 * Exported from MasterCook * Miso Somen Soup Recipe By :Soyfoods Cookery - Louise Hagler Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 pound somen noodles 1 quart water 1 6-inch piece kombu (optional) 1 medium carrot -- cut into matchstick pieces 1/4 pound tofu -- cubed 6 to 8 scallions -- chopped 6 tablespoons sweet white miso Cook the somen until tender, rinse, and drain. Heat the water to boiling, add the kombu, and simmer about 5 minutes. Remove the kombu and save for use another time. Add the carrot and simmer until just tender, about 5 minutes. Add the somen, tofu and half the scallions. Continue to simmer until all are hot. Dip out about 1 cup of the broth, and dissolve the miso. Turn off the soup pot, and stir in the dissolved miso. Serve in soup bowls garnished with the rest of the scallions. Description: " This is a light, savory noodle soup in a classic Asian style.
