Caribbean Caviar

Beans And Legumes Vegetables

 

Amount Measure Ingredient -- Preparation Method

15 ounces canned pigeon peas -- drained

1 cup cooked chilled millet

OR quinoa or amaranth

1 Vidalia or other sweet onion -- chopped

1 red or green bell pepper -- chopped

2 pickled jalapeno chilies -- chopped

or to taste

1/4 cup red wine vinegar

1 teaspoon mild chili powder

1 teaspoon mild curry powder

 

Combine all ingredients in a serving bowl. Cover and refrigerate until

chilled. Serve as a dip or mix with salad greens for a great salad.

 

Yield: about 3 cups, per 1/4 cup: calories: 73, fat: 0g, fiber: 4g.
