Bean-Pepper Salsa

Amount Measure Ingredient -- Preparation Method

15 ounces canned small red beans -- drained and rinsed

15 ounces canned shoepeg corn -- drained

2 tablespoons hot red pepper relish -- or to taste

1 bunch green onions -- sliced

 

Mix all ingredients together in a serving bowl. Cover and refrigerate

until chilled, about 30 minutes. Serve as a dip or relish.

 

Yield: about 2 cups, per 1/4th cup: calories: 104, fat: 1g, fiber: 5g.
