Guest guest Posted August 13, 2000 Report Share Posted August 13, 2000 * Exported from MasterCook * Tomato Coulis Recipe By :Holly Gates Serving Size : 3 Preparation Time :0:15 Categories : Mediterranean Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium tomato -- thickly sliced 1 tablespoon tomato paste in a tube 1/2 teaspoon garlic -- chopped 1/4 cup cilantro or parsley, fresh 1/8 cup salsa 5 artichoke hearts (rinse off salty can juices) 1/8 cup mint leaves olive oil Saute the tomato and tomato paste for a few minutes in some olive oil. Add garlic for the last minute of cooking. Roughly chop everything together. Serve over warm pasta. Description: " Vegan, Surprisingly sweet, but oh so yummy " Source: " Using up leftovers from the fridge. NOTES : The heat from the sauteed tomatoes will warm the rest of the sauce, so it can be poured over the pasta as soon as it's chopped up. I served it over carrots and chana dal but would not do so again because both the sauce and the chana are almost identical in color. However, it tasted wonderful! Nutr.
