Guest guest Posted August 12, 2000 Report Share Posted August 12, 2000 * Exported from MasterCook * Yams with Orange, Cinnamon, and Chile Recipe By :Hot Vegetables, Hugh Carpenter & Teri Sandison Serving Size : 4 Preparation Time :0:00 Categories : Hot Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds yams 1/3 cup extra virgin olive oil 6 cloves garlic -- finely minced 1/4 cup finely minced ginger 2 teaspoons grated or finely minced orange zest 1 tablespoon Asian chile sauce or crushed red chile 1 teaspoon salt 1/2 teaspoon ground allspice 1/4 cup mixture of chopped mint leaves and cilantro sprigs ADVANCE PREPARATION: Peel the yams. Cut them into 1/2-inch slices; then cut each slice into strips. Place the strips together and cut across them to make 1/2-inch cubes. You should have approximately 10 cups. Refrigerate the yams until ready to roast. In a small bowl, combine the oil, garlic, ginger, orange zest, chile sauce, salt, and allspice. All advance preparation steps may be completed up to 8 hours before you begin the final steps. FINAL STEPS: Preheat the oven to 400ºF. Chop the mint and cilantro. Place the yams in a large bowl. Stir the oil mixture, and then pour it over the yams. Stir the yams until evenly coasted, Spray a wire rack with nonstick spray. Place the wire rack on a baking pan lined with foil, scatter the yams in a single layer across the wire rack, and place the baking sheet in the oven. Roast until the yams can easily be pierced with a fork, approximately 30 minutes. Sprinkle with mint and cilantro. Serve at once.
