Pear Relish With Mint

Amount Measure Ingredient -- Preparation Method

4 firm Bosc pears -- peeled

cored and chopped

2 cloves garlic -- finely chopped

1 teaspoon grated fresh ginger

1/2 teaspoon ground cinnamon

1/2 teaspoon ground allspice

1/2 cup packed brown sugar

1/4 cup apple juice

1/3 cup apple cider vinegar

1/4 cup chopped fresh mint

 

In a large Dutch oven, combine all the ingredients. Simmer 20 minutes

until fruit softens.

 

Refrigerate overnight or at least 8 hours before serving.
