It seems like every other recipe calls for cavolo nero. Any idea what this might be called here in the US. There is no photo of this vegetable in the book, or any good description of it. I couldn't find this in the Epicurious dictionary, but I did find it at this site with a recipe: http://italianfood.about.com/food/italianfood/library/rec/blr0108.htm?iam=dpile & \ terms=cavolo+nero Tuscans make this hearty winter soup with cavolo nero, a long-leafed variety of winter cabbage whose leaves are a very dark purplish green. If you cannot find cavolo nero, use the tender small leaves of black-leaf kale.
