Here are a few of the veggie burger recipes I sent to Gary:

 

Basic " Burgers "

Basic " Burgers "

Amount Measure Ingredient -- Preparation Method

1 12 oz pkg frozen prebrowned

---vegetable protein crumbles* -- thawed

2 eggs -- lightly beaten

1/4 cup dry bread crumbs

1/4 cup finely chopped onion

vegetable cooking spray

6 whole wheat hamburger buns -- toasted

condiments: ketchup, mustard, onion,

---pickle, etc.

 

Combine vegetable protein crumbles, eggs, bread crumbs, and onion; shape mixture

into 6 " burgers " .

 

Spray large skillet with cooking spray; heat over medium heat until hot. Cook

" burgers " until browned, about 5 minutes on each side. Serve in buns with

condiments.

 

 

Variations:

Herb Seasoned " Burgers " : Add 1 to 2 teaspoons of herbs such as Italian

seasoning, basil, oregano, or sage to the " burger " mixture.

 

" Cheeseburgers " : Top browned " burgers " with 1 slice of reduced fat Cheddar,

Swiss, or Monterey Jack cheese. Cover skillet and cook over medium-low heat

until cheese is melted, about 3 to 4 minutes.

 

" Burgers " Deluxe: Add 1/4 cup chopped green or red bell pepper, 2 cloves minced

garlic, and 1 to 2 teaspoons of dried herbs to the " burger " mixture. Serve

cooked " burgers " in toasted buns topped with lettuce, tomato, and onion slices.

 

Smothered " Burgers " : Thinly slice 1 large onion, cook in 1 tablespoon of

vegetable oil in a large skillet over medium to medium-low heat until very soft,

about 15 to 20 minutes. Season to taste with salt & pepper. Serve over

" burgers " .

 

Mushroom " Burgers " : Saute 2 to 3 cups sliced mushrooms in 1 tablespoon

vegetable oil in large skillet until tender, 5 to 8 minutes, season to taste

with salt & pepper. Spoon over " burgers " .

Black Bean Burgers

3 16 oz cans black beans -- rinsed & drained

1 1/2 cups uncooked regular oats

1 medium onion -- chopped

2 jalapeno peppers -- seeded & chopped

3/4 cup chopped fresh cilantro

2 large eggs (or substitute) -- lightly beaten

1 teaspoon salt

1/4 cup flour

1/4 cup cornmeal

1 tablespoon vegetable oil

8 hamburger buns

condiments of choice

 

Coarsely mash beans with a fork. Combine beans and next 6 ingredients;

shape into 8 patties. Stir together flour and cornmeal and dredge patties in

mixture.

Cook patties in hot oil in a large non-stick skillet over medium-high heat

for 5 minutes on each side or until lightly browned. Drain on paper towels.

Serve on buns with condiments of choice (lettuce, tomato, onion, mayo,

ketchup, mustard, salsa, etc.).

Caribbean Bean Burgers

1 15 oz. can Great northern beans -- rinsed & drained

1 cup plain bread crumbs

1/4 cup onion -- finely chopped

1 egg (or substitute) -- slightly beaten

3 tablespoons skim milk

1 clove garlic -- minced

1 teaspoon Jamaican jerk seasoning (dry spice blend)

1/4 teaspoon salt (optional)

nonstick cooking spray

4 hamburger buns or 8 bread slices

condiments of choice

 

In a medium mixing bowl, mash beans with a fork or potato masher until

smooth. Stir in remaining ingredients (except cooking spray, bread, and

condiments, of course); mix well.

Shape mixture into 4 patties about 4 " in diameter. Spray a nonstick skillet

with nonstick cooking spray. Heat skillet over medium heat. Cook patties in

skillet until browned, turning once, about 8 minutes.

Serve on buns or bread with favorite condiments.

Chickpea and Tahini Burgers

1 15 oz can chickpeas -- rinsed and drained

3 tbsp minced red onion

3 tbsp chopped fresh dill

2 1/2 tbsp dry bread crumbs

1 1/2 tbsp fresh lemon juice

1 large egg white

1 tbsp tahini

2 cloves garlic -- peeled

1/3 cup plain nonfat yogurt

1/2 tsp hot pepper sauce

1/4 tsp ground cumin

2 pita bread halves, warmed -- halved horizontally

1 cup shredded romaine lettuce

1 cup chopped tomatoes

 

Using a fork, coarsely mash 3/4 cup chickpeas in a medium bowl. Mix in the

onion and next 3 ingredients. Puree the remaining chickpeas, egg white, tahini

and garlic in a processor until almost smooth. Stir into the mashed chickpea

mixture. Season with salt and pepper. Shape into 4 patties.

 

If grilling, spray the grill rack with nonstick spray and heat the grill to

medium. If sauteeing, spray a large nonstick skillet with nonstick spray and

heat over medium heat. Lightly spray the patties on both sides with nonstick

spray. Place patties on the grill or in the skillet and cook until golden brown

and heated through - about 3 minutes per side.

 

Meanwhile, mix the yogurt, hot pepper sauce and cumin in a small bowl. Place

burgers in pita halves. Top with lettuce, tomatoes and yogurt.

Grilled Black Bean Burgers

2 15 oz. cans black beans -- rinsed & drained

1/4 cup fresh cilantro -- chopped

1/4 cup red onion -- finely chopped

1 egg white (or replacer) -- slightly beaten

1 teaspoon ground cumin

1 teaspoon garlic -- minced

1/2 teaspoon ground allspice

1/8 teaspoon red pepper

1/3 cup dry bread crumbs

nonstick cooking spray

1 tablespoon olive oil

salsa for topping

 

Place beans in a large bowl and coarsely mash until they stick together.

Add cilantro, onion, egg white, cumin, garlic, allspice, and red pepper. Mix

until well-blended.

Divide mixture into 8 equal parts. Shape into 1/2-inch thick patties.

Coat the patties with bread crumbs and spray both sides with nonstick cooking

spray. At this point, the burgers can be frozen for later use.

Patties can be cooked on the grill until heated through and browned on the

outside. Alternatively, heat olive oil in a large skillet and fry bean cakes

until brown on both sides, turning once, and cook about 8 minutes total.

Serve warm with salsa for topping and other condiments & toppings of

choice.

Pinto Burgers

Amount Measure Ingredient -- Preparation Method

1 pound dried pinto beans

1 teaspoon salt

1 1/2 cups uncooked quick-cooking oats

1 medium sweet onion -- diced

1 4.5 oz. can chopped green chiles -- drained

2 large eggs (or substitute) -- lightly beaten

1 1/4 cups ketchup

1 teaspoon garlic salt

1/2 teaspoon pepper

3/4 cup flour

3/4 cup white cornmeal

1/2 cup vegetable oil

16 hamburger buns

condiments of choice

 

Place sorted beans in a Dutch oven. Cover with water 2-inches above beans

and let soak for 8 hours. Drain.

Cover with water 2-inches above beans. Bring to a boil, cover, reduce heat

and simmer, stirring occasionally, 2 hours or until tender. Add salt during

last 30 minutes of cooking. Drain and cool. Coarsely mash beans.

Stir oats and next 6 ingredients into beans. Cover and chill 1 hour.

Shape mixture into 16 patties.

Stir together flour and cornmeal; dredge patties in mixture.

Heat 2 tbsp. oil in a large skillet over medium-high heat. Cook patties in

batches 3-4 minutes on each side, adding oil as needed.

Serve on hamburger buns with choice of condiments (ketchup, mustard, mayo,

lettuce, tomato, onion, pickles, etc.)
