Tapioca Pudding

2 1/2 cups soy milk

1/2 cup tapioca pearls

3 tablespoons maple syrup

1/2 cup raisins

 

Bring the milk to a slow boil in a saucepan over a low heat. Add the tapioca

and keep stirring. Add the maple syrup and the raisins. Stir for 5 to 10

minutes until the tapioca begins to thicken. It won't actually be thick, but

will set when it is cooled. You can make tapioca without raisins. Fresh fruit

such as mangoes, peaches, pineapple, and berries can be added at the last

minute.
