Guest guest Posted August 9, 2000 Report Share Posted August 9, 2000 * Exported from MasterCook * Apple Crunch Recipe By :Eating in Eden - Hermine Freed Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 apples -- cored, peeled, and sliced 1 cup rolled oats 1 cup whole wheat pastry flour 3/4 cup apple juice 3/4 cup soy milk 1/4 cup maple syrup 1/2 cup raisins or currants 1/2 cup chopped walnuts or pistachios 1/2 teaspoon cinnamon or nutmeg, or both Put the oats and flour in a bowl. Add the apple juice and soy milk and stir until smooth. Add the raisina, walnuts or pistachios, cinnamon, and maple syrup. Put half of this mixture in the bottom of a lightly oiled loaf pan. Add half the appples, then the other half of the mixture, folowed by apples on top. Sprinkle with a little more cinnamon. Bake in a 350F oven for about 20 minutes.
