Soba Noodles with Vegetables

1/2 pound soba noodles

1/4 pound snow peas

about 12 shiitake mushrooms

1 cup broccoli florets

1 teaspoon light sesame oil

2 tablespoons soy sauce

1 teaspoon grated ginger root

1 teaspoon sucanat

2 scallions, whites and half of greens -- sliced

2 tablespoons mirin

 

Soak shiitake mushrooms in water (if using dried). Steam the broccoli for about

4 minutes. Add the snow peas and steam another minute. Cook the soba noodes in

a pot of boiling water until tender, about 8 minutes. Heat the oil in a pan and

saute the garlic lightly. Add the ginger and scallions and saute about 1

minute. Add the steamed vegetables, soy sauce, mirin, and sucanat, and stir

together. Put the noodles in a bowl and add vegetable mixture. Mix together

and serve.

 

Variation: add 1/4 pound of cubed tofu
