Carob Cake

Amount Measure Ingredient -- Preparation Method

1 cup whole wheat pastry flour

1/3 cup carob powder

1 tablespoon baking powder

1/2 teaspoon salt

1/2 cup maple syrup

1/4 cup canola oil (or use 1/4 cup silken tofu to

avoid the oil)

1/2 cup soy milk

For The Icing:

1/4 cup carob chips

1/4 cup soy milk

 

Preheat the oven to 350F. Sift the dry ingredients into a bowl and blend the

maple syrup, soymilk, and oil. Add to the bowl and whisk together until smooth.

Pour into a lightly oiled baking pan and bake 15 to 20 minutes. Poke with a

toothpick. It's ready when it commes out dry. Let cool. Melt 1/4 cup carob

chips with 1/4 cup soy milk. Stir until melted and smooth. Spread on top of

the cake. You can top it with berries as well.
