Guest guest Posted August 7, 2000 Report Share Posted August 7, 2000 * Exported from MasterCook * Thai Tofu Satay Recipe By :Eating in Eden - Hermine Freed Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound tofu -- cut into 1 " cubes 12 shiitake mushrooms small onions For the Marinade: 1 1-inch piece galangal or ginger 2 stalks lemongrass 6 kaffir lime leaves or zest of 1 lime 1 stalk coriander, with roots 5 cloves garlic 2 tablespoons soy sauce or fish sauce 1 teaspoon ground coriander seeds 1 tablespoon ground cumin 1/2 cup coconut milk (optional) Peanut Sauce: 2 cloves garlic -- minced 1/4 cup ground peanuts 1 tablespoon red curry paste 1/2 cup coconut milk 1 teaspoon oil (soy, safflower, sesame, or canola) 2 tablespoons fish sauce (optional) Marinade: Put the solid ingredients into a spice grinder or blender and grind or blend until smooth. Add the tofu and mushrooms and marinate for at least an hour. (It is best to leave it marinating all day.) Alternate the tofu, mushrooms, and onions on skewers. Grill or broil on all sides. Serve with peanut sauce and brown rice. Peanut Sauce: Saute the garlic in the oil and add the other ingredients.
