Summer Fruit Salad with Lime and Mint (see separate recipe)

 

Eating outdoors is one of life's simple pleasures, whether it's lunch by a

swimming pool or a picnic on the grass. Take advantage of good summer

weather to set your table (or blanket!) outdoors and treat guests to this

tantalizing lunch: chilled Spanish gazpacho with hot Mexican quesadillas

followed by a photogenic fruit salad with the zing of fresh lime. The meal

could just as easily be a light slimmer supper, eaten with friends on a

patio or terrace after the sun goes down. You can prepare the quesadillas

indoors, or outdoors on a gas or charcoal grill. Just be sure to have

plenty of them if there are kids around.

 

The timing: Make the soup up to 12 hours ahead. Make the fruit salad up

to 4 hours ahead. Prepare all the quesadilla ingredients but do not cook

them until you are ready to eat. They should be served hot from the oven

or grill as a companion to the gazpacho. Follow with the fruit salad.
