Yogurt-Garlic Dip (Tzaziki)

Amount Measure Ingredient -- Preparation Method

32 ounces plain yogurt

3 cloves garlic

2 cucumbers -- peeled & seeded

1 tablespoon olive oil

1 teaspoon dried dill weed

1/4 teaspoon sugar -- (or more if desired)

salt & pepper to taste

 

Strain yogurt through a sieve lined with double layers of cheesecloth in

refrigerator for several hours or overnight to remove excess liquid. Peel and

seed cucumber, salt lightly, and let sit for at least 15 minutes.

 

In a food processor fitted with a metal blade, finely chop garlic, place in a

large bowl, and add the drained yogurt. With shredding disc, grate the cucumber

and squeeze out the excess liquid. Add to yogurt and garlic mixture. Add

remaining ingredients and blend well. Taste for seasoning. Chill until ready

to serve.
