Lentil Soup (Faki Soupa)

 

Recipe By :The Greek Feast Santa Barbara Style (A Collection of Family

Amount Measure Ingredient -- Preparation Method

1 pound lentils

2 medim onions -- chopped

3 celery ribs -- chopped

1 carrot -- thinly sliced

1 clove garlic -- minced

1 large bay leaf

2 tablespoons olive oil

salt & pepper to taste

red wine vinegar -- (optional)

 

Wash lentils and drain. Saute vegetables in olive oil in a large soup pot. Add

lentils and bay leaf and enough water to cover; stir, bring to a boil, reduce

heat and simmer for about 45 minutes. Add additional water when necessary to

keep lentils covered. When lentils are almost tender, add salt and pepper to

taste. Serve hot with a splash of vinegar, if desired.
