Guest guest Posted August 5, 2000 Report Share Posted August 5, 2000 I had some of this at the Greek Festival -- yummy! * Exported from MasterCook * Festival Baklava Recipe By :The Greek Feast Santa Barbara Style (A Collection of Family Recipes from Saint Barbara Greek Orthodox Church) Serving Size : 40 Preparation Time :0:00 Categories : The Greek Feast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SYRUP: 4 cups sugar 3 cups water 1/2 cup honey 1 stick cinnamon 2 tablespoons lemon juice 1 small orange -- sliced PASTRY: 1 1/2 pounds phyllo dough 1 1/2 pounds sweet butter -- melted 6 cups walnuts -- medium grind 3 teaspoons cinnamon 1/8 teaspoon ground cloves 1/2 cup sugar 1/2 cup graham cracker crumbs Prepare the syrup first. Bring to a boil (219ºF on a candy thermometer) the first four ingredients with slices of orange. Add lemon juice and boil again to 220ºF. Set aside and allow to cool (remove orange slices). Combine walnuts, spices, sugar, and crumbs in a large bowl. Brush bottom of a 12x18-inch pan with butter and place first phyllo sheet in pan. Brush with butter and layer with 5 more sheets of phyllo, brushing each sheet with melted butter. Keep remaining phyllo covered with plastic wrap and a slightly damp towel. Sprinkle buttered phyllo evenly with nut mixture. Cover with 4 sheets of phyllo, brushing each with butter. Sprinkle nuts, and continue in this manner until all nuts are used. Top with 10 sheets of phyllo, buttering each sheet. Brush top generously with remaining butter. Before baking, cut pastry into diamond shapes, being careful not to cut through the bottom layer. Sprinkle very lightly with water. Bake at 300ºF at least 1 1/2 hours. Check to see that the middle layers of phyllo are crisply baked, not soft. Remove from oven and immediately pour cooled syrup over it, slowly and evenly. Let stand 24 hours. To serve, cut Baklava through to remove from pan. Source: " Olympus Press, P.O.
