Guest guest Posted August 5, 2000 Report Share Posted August 5, 2000 * Exported from MasterCook * Festival Yogurt Cake Recipe By :The Greek Feast Santa Barbara Style (A Collection of Family Recipes from Saint Barbara Greek Orthodox Church) Serving Size : 24 Preparation Time :0:00 Categories : The Greek Feast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound sweet butter 8 eggs -- separated 2 cups sugar 2 cups plain yogurt 2 cups quick Cream of Wheat -- (not instant) 1 1/2 cups flour 2 teaspoons baking soda 1 teaspoon baking powder 1/4 cup orange rind SYRUP: 2 cups sugar 3 cups water 1 tablespoon lemon juice 1 orange -- sliced Prepare syrup: (May be made a day or two ahead.) Combine sugar, water, and orange slices. Bring to a full boil and add lemon juice. On low heat, continue to simmer until slightly sticky, about 1 hour. Allow to cool. Melt butter and let stand until cooled. Pour into mixing bowl and beat at high speed until light. Separate eggs. Beat egg yolks in a separate bowl. Add to butter and blend at low speed. Add sugar and continue blending until light, being careful not to over beat. Blend in yogurt. Combine Cream of Wheat, flour, baking soda, baking powder, and grated rind in a large bowl and add to above mixture, blending thoroughly. Beat reserved egg whites until stiff, and fold into batter. Pour into greased 9x13-inch pan and bake at 325ºF for 45 to 50 minutes or until cake tests done in the center. Remove from oven and immediately cut into diamond or triangle shapes and pour 1 1/2 cups of cold syrup over hot cake. Let cake cool completely before serving. Place in boil or paper baking cups to serve. May be frozen. Allow to thaw at room temperature to serve. Source: " Olympus Press, P.O.
