Guest guest Posted August 5, 2000 Report Share Posted August 5, 2000 * Exported from MasterCook * Spinach & Rice (Spanakorizo) Recipe By :The Greek Feast Santa Barbara Style (A Collection of Family Recipes from Saint Barbara Greek Orthodox Church) Serving Size : 6 Preparation Time :0:00 Categories : The Greek Feast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound fresh spinach 1/4 cup olive oil 1 onion -- chopped 1 1/2 cups hot water 8 ounces tomato sauce 2 teaspoons salt 1/4 teaspoon pepper 1/4 teaspoon dill weed 1/2 cup converted rice lemon wedges -- (optional) Wash spinach and cut into 1-inch pieces. Saute onion in olive oil until golden. Add water, tomato sauce, and seasonings and bring to a boil. Add spinach and rice. Cover and cook over low heat for 25-30 minutes.
