Spinach & Rice (Spanakorizo)

Amount Measure Ingredient -- Preparation Method

1 pound fresh spinach

1/4 cup olive oil

1 onion -- chopped

1 1/2 cups hot water

8 ounces tomato sauce

2 teaspoons salt

1/4 teaspoon pepper

1/4 teaspoon dill weed

1/2 cup converted rice

lemon wedges -- (optional)

 

Wash spinach and cut into 1-inch pieces. Saute onion in olive oil until golden.

Add water, tomato sauce, and seasonings and bring to a boil. Add spinach and

rice. Cover and cook over low heat for 25-30 minutes. Serve with lemon wedges

if desired.
