Guest guest Posted August 5, 2000 Report Share Posted August 5, 2000 * Exported from MasterCook * Vegetarian Moussaka with Potatoes Recipe By :The Greek Feast Santa Barbara Style (A Collection of Family Recipes from Saint Barbara Greek Orthodox Church) Serving Size : 12 Preparation Time :0:00 Categories : The Greek Feast Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 pounds potatoes olive oil for frying 1 1/4 cups short-grain rice -- (white or brown) 1 pound canned tomatoes -- drained & chopped (save the juice) 1 large onion -- chopped 1/4 cup chopped Italian parsley -- (to 1/2 cup) 3 cloves garlic -- finely minced salt & pepper Bechamel Sauce I Cut the potatoes into circles and fry in olive oil. Place on several layers of paper towels and pat dry with additional paper towels to remove excess oil. Meanwhile, begin cooking the rice according to package directions. After 20 minutes, add the tomatoes with their juice, onion, parsley, garlic, salt & pepper. Bring back to a boil and simmer until all liquid has evaporated. Cover the surface of a 10x14x2-inch ovenproof dish with a little oil or nonstick cooking spray so the potatoes do not stick. Cover the bottom of the dish with half the potatoes, followed by the rice mixture, and the rest of the potatoes. Make the Bechamel Sauce and pour over the top layer of potatoes. Bake at 350ºF until the surface turns golden brown. Allow it to cool before cutting into portions. Source: " Olympus Press, P.O. Add flour, salt, pepper, and nutmeg. Stir until well-blended. This looks thick and perhaps a little crumbly because there are more dry ingredients than liquid ingredients. Remove from heat. Gradually stir in milk, using a wire whisk, and return to the low heat. Cook, stirring constantly, until thick and smooth. VARIATION: Enrich the sauce by adding 1/2 cup to 1 cup of grated kefalotiri or kasseri cheese to the sauce after it becomes thick and smooth. Source: " Olympus Press, P.O.
