Lemon Strawberry Roulade

3 eggs -- separated

4 ounces caster sugar

grated rind and juice of 1 lemon

2 ounces ground almonds

1/2 ounce semolina

150 mls double cream -- lightly whipped

8 ounces strawberries -- coarsely chopped

icing sugar -- for dusting

 

Preheat oven to 160C. Whisk the egg yolks with the sugar and lemon rind, until

pale and very thick. Fold in the lemon juice, almonds and semolina. Stiffly

whisk the egg whites and fold into the lemon mixture. Spoon into a greased and

lined 20 x 30 cm Swiss Roll tin and level. Bake for 20-25 minutes, until

golden. Cover the roulade with a damp, clean teatowel and leave to cool. When

cool turn the roulade gently onto a sheet of baking parchment sprinkled with

icing sugar. Remove the lining paper and spread over the whipped cream.

Scatter over the chopped strawberries and carefully roll up. Using the paper to

support the roll. Chill. Dust with icing sugar.
