Spicy Tofu Burritos

Amount Measure Ingredient -- Preparation Method

4 whole wheat flour tortillas (10-inch)

2 tablespoons olive oil

1 cup onion -- chopped

1 tablespoon cumin

1 teaspoon turmeric

8 ounces extra firm tofu -- crumbled

1/2 cup roasted red pepper strips

2 tablespoons 1% low-fat milk

1 tablespoon garlic -- minced

3 ounces mozzarella cheese -- shredded

1 cup lettuce -- shredded

6 tablespoons cilantro -- chopped

4 tablespoons lime juice

salt and pepper to taste

 

Warm tortillas in moderate oven.

 

Heat olive oil in wok. Saute' onion until golden. Add cumin and

tumeric. Stir. Add tofu, roasted red pepper and garlic. Saute' until heated

through. Add cheese and stir until melted. Season with salt and

pepper. Spoon 4 ounces of tofu mixture down center of each tortilla. Top with

lettuce and cilantro and drizzle with lime juice. Wrap tortilla around filling

and serve.

*Storing spices: Store dried spices in airtight containers in cool, dry place,

as direct light, heat and moisture speed up the loss of flavor. Generally,

whole spices stay fresh up to 2 years, while ground spices stay fresh up to 6

months. Red spices such as red pepper and paprika will retain their flavor and

color longer if refrigerated.

 

*Tortillas: Both flour and corn tortillas are popular in today's

cooking. Flour tortillas are made from wheat flour and are smoother than corn

tortillas. They are rolled very thin and - at 8 to 10 inches in diameter -

they are usually larger than corn tortillas. They have from 80 to 160

calories. Corn tortillas are made from a very finely ground and

specially-prepared corn. They are usually about 6 inches in diameter and have

a coarse texture. They have about 45 to 70 calories.
