Guest guest Posted August 2, 2000 Report Share Posted August 2, 2000 Well, Karen and Brenda, here is an Ornish recipe to counteract your White Cheddar Mashed Potatoes!!! * Exported from MasterCook * Baked Potatoes With Herbed Cheese Recipe By : Everyday Cooking with Dr. Dean Ornish, page 88 Serving Size : 4 Preparation Time :0:00 Categories : Main Dishes, Vegetarian Pressure Cooker Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large russet-type baking potatoes 1 1/3 cups nonfat cottage cheese OR nonfat ricotta cheese 1/4 cup minced green onion 1/4 cup chopped cilantro 1 tablespoon lemon juice Salt and pepper SERVES 4 If you don't like cilantro, substitute basil, parsley, dill, or another fresh herb of your choice. Preheat oven to 425 degrees F. Prick potatoes in several places with a fork. Bake until tender when pierced with a knife, about 1 hour. Alternatively, prick potatoes and microwave on high for 6 to 8 minutes per potato, turning occasionally. In a medium bowl, combine cottage cheese, green onion, cilantro, and lemon juice. Stir to blend. Season to taste with salt and pepper. To serve, cut an " X " in the top of each potato, gently squeeze open and fluff the interior with a fork. Top each potato with 1/2 cup of the cheese mixture and serve immediately. TIP: Some people have a harder time staying on a low-fat diet than others, but the reasons may not be what you think.
