Summer Harvest Vegetables

Amount Measure Ingredient -- Preparation Method

1 bunch broccoli

1 small cauliflower

2 cups sliced mushrooms

juice of 1/2 lemon

2 tablespoons peanut oil

1 small slice ginger root

1/2 cup green pepper -- sliced lengthwise

2 cups diagonally sliced celery

1 clove minced garlic

1 teaspoon salt

1 teaspoon onion salt

1 teaspoon black pepper

2 tablespoons soy sauce

1/2 cup grated sharp cheddar cheese

 

Trim stems and leaves from both the broccoli and the cauliflower. Divide into

small florets.

 

Pour lemon juice over mushrooms and set them aside.

 

Measure oil into wok. Rub ginger around sides of wok and discard. Heat oil to

medium high temperature. Arrange broccoli and cauliflower on bottom and sides

of wok. Distribute mushrooms, pepper and celery in layers. Add garlic and all

seasonings except soy sauce.

 

Cover and cook for 10 minute vegetables are cooked, but still crisp. Add soy

sauce and grated cheese and cook until cheese is melted.
