Any recipe from cookbooks by Dean Ornish are being featured this week. He

has recipes in about four of the approximately six books he has

published. He didn't create the recipes himself, but others developed them

using his very low fat eating plan for reducing cardiac events. I like

this book best because the recipes are more kitchen friendly for basic

cooks like myself. In Everyday Cooking there are menus for the four

seasons and then recipes for most menu items. This week I will post a new

summer menu each day and then the recipes associated with that menu.

Menu (Summer): Pizza With Roasted Eggplant And Peppers

Arugula Salad with Corn and Red Onions (see separate recipe)

Pizza with Roasted Eggplant and Peppers (see separate recipe)

Fresh Sliced Figs with Summer Berries

 

There's no reason to go out for pizza when you can make even tastier pizza

at home with fresh seasonal vegetables. Serve this roasted-eggplant

version with a picture-pretty salad, a toss of bright green arugula, red

onion, and sweet corn. End your meal with ripe figs, sliced and topped

with the best available berries. If you can't find fresh figs, substitute

sliced melon.

 

The timing: Make the pizza dough. While it is rising, roast the eggplant

and prepare the other pizza-topping ingredients. Assemble and bake the

pizzas. While they are baking, prepare the salad. When you are ready for

dessert, slice the figs into halves or quarters and place in four dessert

bowls. Mix together raspberries, blueberries, blackberries, or other

summer berries and spoon over the figs.
