Green Gazpacho

2 peeled -- chopped tomatoes

3 stalks chopped celery

1 small peeled chopped cucumber

1 cup coarsely chopped romaine or other lettuce

1/4 cup orange juice

1 green onion

juice of one or more lemons to taste

parsley (optional)

 

Combine tomatoes, celery, cucumber, lettuce, orange juice, onion and lemon juice

in a blender. Purée. Add the parsley, if desired.
