Guest guest Posted July 29, 2000 Report Share Posted July 29, 2000 * Exported from MasterCook * Fung Chan Chin's Classic Cheesecake Recipe By :Bon Appétit, July 1977 Serving Size : 8 Preparation Time :0:00 Categories : Desserts/Cakes Microwave Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 stick butter 1/4 cup sugar 26 single crushed graham crackers 4 separated eggs 1/2 cup sugar 4 3-ounce packages cream cheese heated in a bowl for 30 second under microwaves 2 teaspoons vanilla extract 1 1/2 teaspoons almond extract 2 cups sour cream 3 tablespoons sugar 1/2 teaspoon cinnamon Melt butter in a 9-inch glass pie plate for about 1 minute under microwaves. Blend sugar and crumbs with melted butter and press evenly onto bottom and sides of pie plate. Refrigerate. In a large bowl, beat egg yolks until light and fluffy. Add sugar and blend well. Gradually beat in softened cream cheese. Blend in 1 teaspoon vanilla extract and ½ teaspoon almond extract. In another bowl beat egg whites until stiff. Mix in remaining vanilla extract and fold egg whites into egg yolk-cream cheese mixture. When well-blended, turn into chilled graham cracker shell. Cook in center of the microwave oven 6 minutes, rotating the pie plate ½ turn every 2 minutes. Remove from microwaves and cool 45 minutes. Blend sour cream, sugar and remaining almond extract. Spread topping evenly over cooled cheesecake. Dust with cinnamon and cook under microwaves 2 minutes, rotating ½ turn after 1 minute. Cool, then place in refrigerator for several hours. Note: If filling bubbles, wipe rim of pie plate after removing cheesecake from oven. Note: Frequent references to setting or standing time appear in microwave recipe instructions.
