Pour sugar into a shallow bowl. Wash and dry the clusters of grapes. Dip each cluster into egg white, covering all surfaces and letting excess drain into bowl. Set aside on waxed paper until all grapes are dipped. Surfaces will be tacky to the touch. At this point, coat clusters with granulated sugar, shaking off excess. Place on waxed paper to dry.
