Guest guest Posted July 27, 2000 Report Share Posted July 27, 2000 * Exported from MasterCook * Potato-Leek Soup Recipe By :Eating in Eden - Hermine Freed Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 leeks -- chopped 1 teaspoon olive oil 4 potatoes -- sliced 4 cups stock 4 tablespoons chopped parsley 4 tablespoons chopped tarragon 1 cup fat-free soy milk 1 teaspoon ground nutmeg Saute the leeks in the olive oil until soft. Add the potatoes, nutmeg, and stock and cook until potatoes are soft. Add the herbs and soy milk and simmer for a few more minutes. Remove the vegetables with a slotted spoon and put in a blender with about 1 cup of the liquid. Puree and return to the pot with the rest of the stock.
