Chowder For Hungry Bellies Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups & Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound potatoes 6 ears corn 6 gloves garlic 1 onion -- chopped Olive oil 1 tablespoon tamari (or salt to taste) 1 pint plain soy milk -- (1 to 2) Basil -- chopped Tomatoes -- chopped Cut potatoes in half and boil until quite soft. Meanwhile, cut the kernels off corn. Mince garlic and chop onion, then saute in a little olive oil for 3 to 5 minutes. Add the corn and tamari (or salt to taste) and cook for another 5 minutes. When the potatoes are soft, remove most of the water and reserve it. Mash the potatoes, adding as much water as necessary. Add the corn mixture, along with salt and pepper to taste, and reheat, adding soy milk until desired consistency is achieved. Serve garnished with basil and some chopped tomatoes.
