Guest guest Posted July 27, 2000 Report Share Posted July 27, 2000 * Exported from MasterCook * Chard Enchiladas Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons oil 2 cloves garlic -- chopped 1 onion -- chopped 4 cups coarsely chopped chard 1 tablespoon butter 1 tablespoon flour 1/2 cup milk 1 cup grated Chedddar cheese 6 corn tortillas 1 cup hot enchilada sauce or salsa Preheat oven to 375 degrees. Heat oil, saute garlic and onion until golden. Add chard in small amounts until cooked down. In separate pot, melt butter, stir in flour, add milk and 1/2 of the cheese. Stir until thick, then mix into cooked greens. Fill the tortillas, roll and place in a lightly greased baking dish. Spread sauce over and sprinkle the remaining cheese; bake for 25 minutes. Per enchilada: 232 cal.; 8 g pro.; 19 carb.; 14 g fat (6 sat.; 4 monounsat.; 4 polyunsat.); 28 mg chol.; 460 mg sod.; 2 g fiber; 54 percent calories from fat.
