Tahini Vegetables with Pita Bread

1/4 cup fresh minced parsley

2 tablespoons fresh minced cilantro

1 teaspoon chopped garlic

3 tablespoons tahini

2 tablespoons fresh lemon juice

2 tablespoons safflower oil

2 tablespoons water

1/2 teaspoon salt

1/4 teaspoon cayenne

1/2 large cucumber -- halved lengthwise & seeded

1 large ripe tomato -- chopped

1 small onion -- minced

4 pita bread rounds

1/2 head lettuce -- shredded

 

Preheat oven to 350ºF. In a food processor, combine the parsley, cilantro,

garlic, tahini, lemon juice, oil, water, salt, and cayenne, and blend until well

combined. Transfer to a mixing bowl and set aside. Cut the cucumber into thin

slices and add to the mixing bowl. Add the chopped tomato and minced onion and

toss to combine well. Taste and adjust seasonings.

 

Wrap the pita together in foil and heat in the oven for 15 minutes. Halve each

loaf to form 2 pockets and gently open the pockets. Spoon about 2 tablespoons

shredded lettuce and 3 tablespoons vegetable mixture into each pocket. Serve

immediately.
