Jamaican Jerk Sauce

1 small onion -- chopped

2 small hot chiles -- seeded & chopped

1 clove garlic -- minced

2 tablespoons olive oil

2 tablespoons low-sodium tamari

2 tablespoons cider vinegar

2 tablespoons molasses

1 tablespoon dark Jamaican rum

1 tablespoon ground allspice

1/4 teaspoon dried thyme

1/4 teaspoon nutmeg

 

Combine the onions, chiles, garlic, oil, tamari, vinegar, molasses, rum,

allspice, thyme, and nutmeg in a food processor or blender and puree until well

blended. Transfer to a saucepan and heat to boiling. Reduce the heat to low

and simmer 10 minutes, stirring occasionally, until sauce thickens slightly.

1/4 cup sake -- or dry white wine

1 teaspoon sugar

3/4 teaspoon wasabi powder

2 cloves garlic -- finely minced

1/2 teaspoon finely grated fresh ginger

1/2 cup water

 

Combine the miso, sake, sugar, wasabi, garlic, ginger, and 1/2 cup water in a

small bowl and stir until well blended. Taste and adjust seasonings.
