Stuffed Mushrooms

1 pound cremini mushrooms

4 shallots -- chopped

1 tablespoon olive oil

4 cloves garlic -- minced

3/4 cup bread crumbs, preferably made from stale

bread

1 tablespoon chopped basil

1 tablespoon chopped parsley

1 tablespoon chopped oregano or marjoram

1/4 cup casein-free soy Parmesan

pinch ground nutmeg

sea salt and pepper to taste

 

Remove the stems from the mushrooms and chop. Chop the shallots and saute in

olive oil until they just turn soft and brown. Add the garlic and mushroom

stems and cook, stirring, until the mushrooms wilt. Add herbs and bread crumbs

and sprinkle with a few tablespoons of water. Turn off the heat and add soy

parmesan and seasonings. Fill the mushroom caps with the mixture and place in a

non-stick baking pan (or brush oil on a regular pan) and bake until mushrooms

are cooked through (about 15 minutes). Serves 4 to 6
