Guest guest Posted July 26, 2000 Report Share Posted July 26, 2000 * Exported from MasterCook * Egyptian Fava Beans Recipe By : Robin Robertson Serving Size : 4 Preparation Time :0:00 Categories : Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 2 garlic cloves -- chopped 1 teaspoon ground cumin 1/8 teaspoon cayenne 2 cups cooked fava beans 1/2 teaspoon salt 1 large ripe tomato -- chopped 1 medium red onion -- chopped 3 tablespoons chopped fresh parsley Heat oil in saucepan over medium heat. Add garlic, cumin and cayenne and cook, stirring, for 1 minute. Add fava beans, salt and enough water to simmer, about 1/2 cup. cup and cook about 10 minutes to heat through and blend the flavors. Add more water if necessary. Transfer beans to a serving bowl and sprinkle with the chopped tomato, red onion and parsley.
