Guest guest Posted July 26, 2000 Report Share Posted July 26, 2000 * Exported from MasterCook * African Yam Salad Recipe By : Robin Robertson Serving Size : 8 Preparation Time :0:00 Categories : Salad Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 large yams or sweet potatoes 1 small onion -- minced 1 cup frozen peas -- thawed 1/4 cup safflower oil 3 tablespoons freshly squeezed lemon juice 1/8 teaspoon salt 1/8 teaspoon cayenne Place unpeeled yams in saucepan and cover with water. Bring to a boil and cook (about 25 minutes) til tender but firm enough to slice. Cool the yams then peel and cut into 1/4 inch slices. Combine yams, onion, oil, peas, lemon juice, salt and cayenne in a bowl and mix gently to combine. Chill at least one hour before serving. Description: " Yams are indigenous to Africa. The orange sweet potatoes we find in the US are called yams to differentiate them from the yellow variety of sweet potatoes.
