Guest guest Posted July 25, 2000 Report Share Posted July 25, 2000 * Exported from MasterCook * Tofu Chili Recipe By :Weight Watchers Magazine January/February 1998 Serving Size : 6 Preparation Time :0:00 Categories : Lowfat Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Tbsps Olive Oil 3 C Onion -- chopped 2 2/3 C Green Bell Pepper -- chopped 3/4 C Carrot -- chopped 12 Garlic Cloves -- minced 2 Tbsps Chili Powder 1 C Dry Red Wine 2 Can (16 Oz) Kidney Beans, Canned -- undrained 1 Can (28 Oz.) Italian-style Tomatoes -- undrained & chopped 2 Pkgs (12.3 Oz) Tofu, Firm -- drained and chopped* 1/2 C Cilantro -- chopped 1/2 Tsp Salt 1. Heat oil in dutch oven over medium heat. Addonion and next 3 ingredients; saute 5 minutes. Add chili powder; cook 1 minute, stirring constantly. Add wine, beans, and tomates; bring to a boil. Reduce heat and simmer uncovered, 1 hour. Add tofu; simmer 30 minutes, stirring occasionally. Remove from heat stir in chopped cilantro and salt.
