Raspberry Chocolate Pie

1 mixture for Easy Pie Crust (for 1 pie)

3 tablespoons unsweetened cocoa powder

1 tablespoon maple syrup

1 1/2 pounds frozen raspberries -- thawed and drained (liquid

reserved)

2 tablespoons arrowroot powder

1/2 cup light brown sugar

1 teaspoon almond extract

 

Preheat oven to 350F.

 

To the Easy Pie Crust mixture, add the cocoa and maple syrup and process in a

food processor until well blended. Press the mixture into a 9-inch pie pan and

bake for 20 minutes until lightly browned. Cool.

 

Combine the reserved raspberry liquid and the arrowroot in a saucepan until

smooth. Add the brown suger and gently fold in the berries. Place over medium

heat and stir with a wooden spoon until mixture becomes clear and thickens.

Cook for 1 minute more. Add the almond extract. Cool.

 

Spoon the raspberry mixture into the pie crust. Refrigerate at least 2 hours

before serving.
