Guest guest Posted July 24, 2000 Report Share Posted July 24, 2000 This is a family favorite - it's a lowfat version of a recipe from Sarah Fritschner's Vegetarian Express Lane Cookbook * Exported from MasterCook * Greek White Bean Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons olive oil 1 stalk celery 1 medium carrot 1 medium onion 1/2 cup parsley 32 ounces great northern beans, canned 4 cups water 6 ounces tomato paste 1/4 teaspoon crushed red pepper black pepper -- to taste Heat oil in large pot over medium high heat. Chop veggies & add to the pot as you prepare them. Stir & cook until softened, about 10 minutes. Add parsley, beans, water, tomato paste and black pepper.
