Peach Delight

2 cups fresh raspberries

3 tablespoons sugar

2 tablespoons water

4 peeled peaches -- halved and pitted

2 cups vanilla low-fat ice cream

1/4 cup chopped fresh mint

 

1. Preheat broiler.

 

2. Combine the first 3 ingredients in a blender, and process until smooth. Set

aside. Broil peach halves, cut sides up, 2 minutes or until lightly browned.

 

3. Place 1 peach half into each of 8 dessert bowls; spoon 1/4 cup ice cream into

each peach half. Drizzle the raspberry mixture evenly over the ice cream.

Sprinkle each serving with 1 1/2 teaspoons chopped mint. Yield: 8 servings.
